We took that into account when we created this sandwich. We wanted to show that we can pack immense flavor into something that might look simple at first glance. Just like our campus community, every ingredient plays a meaningful role — bringing boldness, warmth, and character to the table. The Smokey Mountain Chicken Sandwich is a reflection of that spirit.”
CHICKEN: THE COOP Cleveland State University
Ingredients: buttermilk-brined chicken breast infused with pickle juice, sun chips, Nashville hot oil glaze with bacon fat, purple cabbage and jalapeño slaw, pickled jalapeños, banana peppers “In the back corner of a small Cleveland State University kitchen, where the air shimmered with spice and smoke, a chef named “Coop” set out to make something worthy of the campus’s “fire” energy. Balancing sweet, smoky, and infernal. Today, the oil sizzled like it knew it was about to witness history. This isn’t just a Nashville hot, it’s Nashville reborn right here in downtown Cleveland.”
CHICKEN: HOT HONEY CRISPY CHICKEN WAFFLE St. Thomas Aquinas College Ingredients: pickle-juice-marinated fried chicken thigh, Belgian waffles, pepperjack cheese, thick-cut bacon, hot honey “This sandwich is served at the Spartan Bites food trailer. We have been doing weekly pop-ups which have been very successful. This is part of our “Crispy Coop, All Day Chicken” event. Taking in the tastes and likes of our student population we curated special items to give them an elevated and fun menu. With the concept of “crazy” food truck items in mind we developed this sandwich as a featured item. It was so popular we ended up selling out by the end of the day.”
